Gremolata – Fresh Herbs
Herbs are easy to grow and full of health benefits and pack a punch to flavor up a boring dish. Culinary herbs are herbaceous plants that are used to add flavor and color to all types of meals. If you find that low-fat or low-salt foods taste bland, use herbs to enhance the flavor of virtually any dish, including desserts. Fresh herbs are generally delicately flavoured, so add them to your cooking in the last few minutes. Consuming herbs may help to prevent and manage heart disease, cancer and diabetes. It may also help to reduce blood clots and provide anti-inflammatory and anti-tumour properties.
One of my favorite things to make is a gremolata, which is typically and Italian condiment to add flavor to meats, vegetables, bread, eggs and just about anything. The typical gremolata is made with Italian parsley, garlic and lemon zest. To make finely chop parsley and add garlic and lemon zest to taste. The wonderful thing about this recipe is it can be adapted to add any fresh herbs on hand. Add some good quality olive or but oil to make it even more delicious. I usually chop up whatever herbs I have on hand and add the garlic and lemon zest. We put it on everything! Try it on grilled fish, meats, roasted veggies, add to olive oil for a baguette dip.
